Bolay, an increasingly popular healthy food eatery, just opened a new location on Okeechobee Boulevard in West Palm Beach

The unique restaurant opened its first Palm Beach County location in Boca Raton's Polo Shoppes just over a year ago, and has already grown fast enough to open a new spot off I-95 in West Palm. 

The secret to their success, according to co-founder and president Chris Gannon, is both the food and the staff. 

The restaurant is centered around clean, nutritious eating, offering a selection of grains, vegetables, and meats for customizable bowls. You don't have to go with a salad; choose a base like rice or noodles, and add nutrient rich veggies and proteins like quinoa, roasted butternut squash, smoky cauliflower, chicken, steak, ahi tuna, etc.

The set up is similar to Chipotle; create your own "bol" by walking along the food line and choosing from an array of 26 items, categorized as bases, veggies, proteins, toppings and sauces.
