After a long hot summer day at the beach something cold and refreshing would hit the spot. The frozen delicacy is enjoyed by kids and kids at heart alike. No need for a special occasion to enjoy gelato – its not a healthy lifestyle saboteur, rather a sensible option to ice cream.
Gelato has been an Italian dessert essential since the late 1600’s. Italian chef Francesco Procopio dei Coltelli opened his “Café Procope” in Paris. It was at this Parisian cafe that gelato was introduced. The master chef was given exclusive royal license by King Louis XIV, making him the sole maker of gelato in the kingdom.
But did you ever wonder what the difference is between ice cream and gelato? Is it the same with a different name and a higher price point? As a matter of fact, gelato is quite dissimilar from ice cream. Differences in gelato and ice cream include:
Preparation: Gelato is churned at a much slower speed, so less air is incorporated into the mixture. The slower speed makes gelato denser than ice cream.
Ingredients: While both gelato and ice cream contain cream, milk and sugar, authentic gelato uses more milk and less cream than ice cream and generally doesn’t use egg yolks, which are a common ingredient in ice cream. Italian gelato includes only about 4 to 9 percent fat and American style ice cream has between 14 and 25 percent fat.
Creaminess: Gelato is more dense, creamier, smoother and silkier than American style ice cream.
