Palm Beach County's first and only omakase cocktail experience opened just a few months ago when Saxon Sushi was created by Sweetwater Bar & Grill in Boynton Beach. 

Saxon Sushi Bar was opened in March right next door to Sweetwater and there's a door inside the restaurants so you can go back and forth if you please. The Saxon bar is the "laboratory of Sweetwater" according to co-owner Clint Reed, where they test and try new cocktail innovations and serve omakase cocktails based on guest feedback.

The Japanese method of  "omakase shimasu," which translates to "I trust you, the chef," presents guests with more personalized options for dining and drinking. In Japan, omakase allows the chef to decide what to serve based on guests' preferences using the ingredients available. Then, changes can be made based on immediate customer feedback, offering a more one-on-one approach to dining. Instead of having a set drink menu at Saxon, omakase cocktails let the bartender immerse in creating a drink based on the plate and preferences of the customer.
